Quick Salmon and Quinoa Recipe

I don’t know about you, but TIME is really my biggest obstacle to staying on track with healthy eating.  Sure, we all know we SHOULD have nice, wholesome homecooked meals for breakfast, lunch and dinner, but who has the time?! Fast food vendors came along to help ease our overbooked schedules, but we all know by now that relying on that not only results in a smaller wallet, but a bigger waistline and poorer health.  So today I’m going to share with you one of my favorite healthy, homecooked, ‘fast food’ options: Quick Salmon and Quinoa Recipe.

Now the trick to homecooked fast food lies in the preparation.  If you have a few staple items ready, you can put this together in less than 5 minutes.  If you aren’t prepared, it’ll take you 15 which still isn’t a giant time sucker, but feels like forever when you’re in a pinch!  Simply cook the quinoa according to package directions and always keep a batch on hand in the fridge.  If you have that, everything else is a snap!

1/4 cup cooked quinoa

3 oz canned wild caught salmon (half the can) (or leftover salmon from last night if you’re a lucky duck ;)

small handful sliced mushrooms

small handful fresh spinach

Olive oil

Seasonings:  These are what I use.  There’s no specified amount because I just sprinkle them all over the dish according to whim of the moment, lol.  Feel free to experiment and use your favs!

sea salt


garlic powder

ginger powder

dried mustard (optional)

cayenne (just a bit!)


Warm the olive oil in a pan over medium heat.  Add the mushrooms and let them saute a minute or two.  Add the spinach and let it wilt lightly then add the cooked quinoa and salmon to warm through.  Season to taste and serve!  Bonus!! This recipe is very easy to modify with any variety of fish, chicken or turkey so just toss in whatever you have and let me know what you come up with!
